• Boiled soybeans from Oita prefecture (pre-cooked to ideal softness)

• Dried barley koji malt from Oita prefecture

• Sea salt from Nagasaki prefecture (100 g)

• Freezer bag for fermentation

No need to worry about soaking or cooking soybeans yourself, as this set comes ready with boiled soybeans.

Simply rehydrate the dried malt in lukewarm water, mix with soybeans and salt, knead, and allow to ferment for about 2-3 months. Ideal for beginners and suitable for apartment or condo kitchens.

Shelf Life:

• Boiled soybeans: 9 months from manufacture

• Barley malt: 1 year from manufacture

How to Use:

1. Warm the boiled soybeans.
