Rakkyo, a type of Japanese shallot, is traditionally pickled in a lightly seasoned sweet vinegar, making it an essential accompaniment to Japanese curry. This specially crafted rakkyo pickling vinegar is just what you need to create authentic pickled shallots, adding a sweet and tangy flavor to your dishes.
This versatile vinegar is a balanced blend of sugar, salt, sweetener, and traditionally brewed Japanese vinegar. While it's ideal for pickling rakkyo shallots, its uses extend far beyond that. You can also use it to pickle ume plums, daikon radishes, cucumbers, and other vegetables that benefit from a sweet and sour kick.
In addition to pickling, this vinegar makes an excellent dressing for Japanese aemono—small, dressed side dishes like fresh salads, seafood, or sashimi.
Instructions:

For Pickling Shallots:
- Wash and trim 1kg of rakkyo shallots.
- Place them in a colander and pour boiling water over them, then drain well.
- Place the shallots, sliced red chili, and 700ml of rakkyo vinegar in a large container.
- Seal the container and store it in a cool, dark place for 2-3 days.
- Shake the container 2-3 times a day to mix.
- After 10 days, the pickled rakkyo shallots will be ready to enjoy.

For a Light Salad:
- Shred cabbage into thin strips, julienne carrots, and mince onion.
- In a bowl, mix 40ml of oil, 5 tablespoons of rakkyo vinegar, and a pinch of salt and pepper.
- Toss the vegetables with the dressing and chill in the refrigerator before serving.
